用手搓:用手搓一搓米,看手上有没有染料,如果有黑色染料,就是假米。

看颜色:正宗的黑米表皮是有光泽的,颜色有深有浅,而染色的黑米却没有光泽,颜色一致。

看表皮:正宗的黑米用指甲抓下来的表皮是片状的。如果是粉末状的那就是劣质黑米。

看米心:正宗黑米的米心是白色的。普通大米的米心是透明的,没有颜色。如果染色的黑米是用普通大米染成的,那么染料的颜色会渗透到米心里去,变成黑色。

看泡米水:正宗黑米的泡米水是紫红色的,稀释之后也是紫红色或偏红色。如果泡出的水像墨汁一样经过稀释以后还是黑色,那肯定就是假米了。

加白醋:黑米水遇到碱会变绿,遇酸会变红。正宗的黑米水遇到酸就会立刻变红。随机取一些粒黑米放入杯中,往杯子中倒白醋,充分搅拌,一会儿后白醋变红为真黑米,变黑为假黑米,有少量红色并黑色者为真黑米被提取花青素后又染黑所致。
